Content Green Banana Salad

In the hillside of Jamaica lies a small village called Content. Bananas grow plentifully there. This is where chef Alex Fieldings grew up. His grandparents planted lots of banana trees and would bring bananas to the market to sell. “So, I grew up with a love for bananas,” he says. In the States, he noticed that bananas aren’t used as much in cooking and he wanted to create a dish with green bananas in place of potatoes. This is how his Content Green Salad came to be.

Ingredients

Serves 2

1 gallon of tap water

1 teaspoon salt

1 tablespoon vegetable oil

4 green bananas, cooked and cut into pieces

3 tablespoons minced green peppers

3 tablespoons diced red peppers

3 tablespoons diced yellow peppers

1 tablespoon minced red onion

1/4 cup mayonnaise

2 tablespoons olive oil

A pinch of black pepper

Sliced tomato, as desired

Instructions

In a medium-sized pot, add the 1 gallon of water and bring it to a boil. Add the bananas, salt and vegetable oil and cook for 30 minutes. After the bananas become soft, remove them from the water and allow them to cool. Remove the skin and cut the bananas into rings. Combine the bananas and the remaining ingredients in a bowl and mix. Garnish with sliced tomatoes and serve.

Bio

Chef Alex Fieldings has been cooking for as long as he can remember. He grew up in Jamaica watching his grandma cook: “I was always exploring. I didn’t wait for the adults to tell me to cook. In Jamaica, that’s how you become immersed in it – by watching your older family members.” He was always taking the initiative to procure his own ingredients. In high school, he was torn between two interests – cooking and art. Only through the former could he see a “pathway” to making a living. Determined to pursue that path, while still in high school, he worked full-time in a hotel. With the money he saved from work, he attended culinary school in Jamaica. “My journey has taken me to so many different countries learning so many different things.” At Mobay Cafe, he says his goal is to make healthy, beautiful food that “isn’t overpowered by seasonings or oils or artificial ingredients. I want you to taste that blend of everything I’m putting into it.”
